If you’re looking for a unique way to showcase the very best seafood Australia has to offer, why not try this ‘Seafood in a Pot’ recipe! Its a quick and easy meal on the road and allows you to have a beer or a glass of wine with friends while its cooking.
Ingredients/Utensils
1 Large camp oven
1 long wooden spoon
2 kg peeled Prawns
2 kg Mussels
2 Chorizo sausage chopped
Big Tin Tomatos
3 cups Rice
1/2 bottle of white wine
1 bottle of water
2 Onions diced
3 cloves of garlic
2 medium Chilli (or to taste)
Salt Pepper to taste
Method
1. Fry onion, garlic, sausage & chilli till onion soft in a little oil and butter. Add tomato, wine & water put the lid on the pot and onto the coals and have a beer.
2. After the beer stir the pot and check it. If it is smelling good, add the rice and return the lid and to the coals.
3. After another beer check the rice and when it is just about cooked add all the seafood. Make sure there is enough liquid for it to be a thick soup consistency.
4. At this point just put the lid on after the seafood is stirred in well and let it sit for 5 mins long enough for the mussels to open, and the rice to be completely cooked through. Leave it for longer as needed. It won’t need to go back onto the coals as the pot will be hot enough.
